The Peru Las Damas de San Ignacio, or "The Ladies of San Ignacio," is a fair trade certified co-op in Cajamarca, Peru. Fully women owned and operated since its founding in 1969, the focus of COOPAFSI (Cooperative Agraria “Frontera San Ignacio” Ltd) has been to promote gender equality in the coffee growing sphere, cultivate a delicious and consistent product in a sustainable manner, and invest in the women of their community.

This version of the Peru is medium all around: Viennese (medium) roasted, medium bodied, and medium in its acidity. Expect the same great notes of orange, caramel, and brown sugar that you get from the light roast, but with a bit more backbone and slightly smoother finish.

Very nice brew

1st time trying the Viennese roast Peru. Not as dark as French or Italian Roasts. All in all makes a very nice cup of coffee. The dark does not overwhelm the overall taste

Caramel toffee deliciousness

I’ve been brewing this Peruvian coffee as espresso, and it turns out beautifully every time. The caramel and toffee notes make for flavorful lattes and americanos. It produces a satisfying crema, but not as rich as some others.
