A truly wild coffee often picked by very small landholders or in the wild and then sold through a gathering co-op. This irregular coffee is processed and dried at numerous huts and homes and maybe be the farmer's only cash crop. Often it possesses a lemony-citrus aftertaste thanks to its high acidity and a medium body strength. Truly a remarkable cup from the birthplace of coffee!
There are a few coffees that fit our flavor profile, and all of them happen to be African - Tanzania, Kenya (AA and Peaberry), and Ethiopia. It must be the fact that coffee was invented here. I have found that each bean potentially requires its own grind for french press, so I'm in the process of capturing those details so I don't need to figure it out when I'm rotating through bags.
I love everything about this coffee. The aroma, flavor and balanced nuances are perfect. I love that ot is fair trade coffee. I can picture the places in Ethiopia where it is grown, dried and sold by its farmers.
Wowza! What a spectacular cup so typical of Yirgacheefe. With initial aromas of white peach and the expected floral undertones, this opens up to a well balanced cup with a bit of acidity on the very clean finish and a medium/light mouthfeel. Perfectly roasted.
