Bursting with complexity, this brew does indeed have notes of milkshake, banana, and guava. That said, the tropical sweetness is balanced out a bit with a sharper hint of "funky fruit" and wine.
A lot of these standout qualities are thanks to the anaerobic processing method, which involves putting the coffee cherries into steel drums and depriving them of oxygen for 48-72 hours. This brief fermentation period is the magic factor that brings out a completely different flavor from the beans.
