Did you know that the Cumbres del Poas was the original farm that developed the honey processing method? Pretty awesome, right?

What that means is, most coffee is processed using either a "dry" or "washed" method. This bean however, goes through a specialized process that is in between the two. A "honey process" keeps the coffee cherry around the seed until the fruit dries to a certain color (white, yellow, red or black), which imbues a little extra sweetness and can modify the body strength and acidity. The Black honey process is the longest out of the four colors, meaning it is the fruitiest and sweetest.

Done to a full city light roast, the Cumbres del Poas Black Honey offers a medium body with crisp, clean acidity. Expect notes of pomegranate, grape, and blackberry with just a hint of nutmeg, plus that lingering sweetness thanks to the special processing method!

A great morning cup

A truly unique cup reminiscent of single lot yirgacheffe, but clearly Central American in character. Whiffs of Sweet tropical fruit and coco on the nose, with a medium body and the expected clean acidity wrapped in unexpected sweetness.

Frangipane, sandlewood, guava, ripe banana.
