This excellent varietal comes to you via the collective efforts of a dozen small, committed coffee farming co-ops in Bajawa, Flores. The coffee itself is grown on the slopes of the Inerie Volcano in the Ngura district of the island, and is processed a little differently than your typical "washed" bean, through a method called "wet hulling."

Used almost exclusively in Indonesia, the wet hulled processing method has a much quicker turn around time than the more traditional "washed" process, allowing Indonesian farmers to export their product a mere month after it was picked (rather than the more typical 2-3 months). Wet hulling also mutes the acidity and brings out the body strength, highlighting that robust body and smooth finish that Indonesian coffees are known for.

Done to a Full City (light) roast. Expect a full body with above average sweetness and notes of vanilla, molasses and bakers chocolate.
